5-9 was more of the same leftovers, not much exciting.  Also a few off road 'treat' meals thrown in which only reinforce that off road is bad.

Beef Roast with Mushrooms & Asparagus (Crockpot)


 Super easy and delicious.  Odd maybe, but a nice breakfast to wake up to.

Mix ingredients together in the crockpot.  Cook on medium for 1 hour; Cook on low overnight.

400g raw asparagus
12 oz white mushrooms, quartered
1/2 red onion chopped
4 cloves garlic, minced
2.8# raw beef shank roast boneless
1T dried rosemary

I definitely need a bigger crockpot.  In which case I would double the mushrooms and asparagus. Otherwise mine was packed in with all of this.  I also ended up with about 2 cups of beef broth.  You could easily add 1-2 cups of rice of pasta to the mix if you were into that sort of thing.

Breakfast:  Italian Pork Roast & Steamed veggies with basil

 
Lunch: salad a la intern group Thursdays & an apple. 
Followed by my back up apple later in the day because really, that's just a plate of lettuce... 

 
Dinner: Baked sweet potato & Roast beef with mushrooms & asparagus

Back in business for another Whole30-ish undertaking.  Inspired by Adi... Full day of cooking and restocked the fridge until next time...

Chicken and broccoli revisited

This could not be easier.  The original was pretty dang easy. This is even easier. I even went the extra lazy route and made it with frozen meat and broccoli. Yes, really. 

In a large roasting pan (mine's 9x13) mix:
- 2 pounds frozen boneless chicken breast
- 2 bags (10 cups) frozen broccoli
- 1 T chopped ginger root
- 1 T ground ginger
- 2 cloves minced garlic
- 1 T garlic powder
- 1 onion, sliced
- 1 T onion powder
- 16 oz mushrooms, quartered or sliced

Place in the oven at 375F and bake for 45 minutes stirring once half way through.

Delicious.  And by far the #1 thing I get comments on when I'm eating lunch at work.

Thankful for leftovers

It's day 2 take 2 and so far so good.  I still feel full from the Sunday pre-whole30 binge of 'things I never get to eat'.  Which was a poor idea but also probably unnecessary on top of the Christmas, second Christmas, birthday, new years and vacation episodes of 'things I never get to eat' over the past 14 days.  Yikes.  All that aside my house has basically remained whole 30 compliant so that seems to make things much easier.  What doesn't make it easier is that it's remained compliant by me not going to buy groceries and in turn having really nothing to eat. 

Today's food consisted of, well, the same things as yesterday.
Breakfast was an apple, hard boiled eggs and avocado.  Lots of steamed veggies and carrots with babaganoush for lunch.  Dinner was the chipotle chicken salad again.  Not bad but not exciting.  I am down to the last scraps of food in the fridge though which have become lunch packed for tomorrow.  Not sure what comes after that but gonna have to do something...

So far no major changes. I think my gut is still processing Sunday's food so it may be a while before things start to reset to normal... But the upside, if you remember the timeline from last time I haven't really entered the hangover stage yet or at least its much more mild than the first time around.

Aaaand we're back

Mmm, fiesta party!  You're looking at green peppers stuffed with butternut squash spanish "rice", roasted poblano peppers sauted with baby bellas, zucchini and red onions & a mexican salad of chopped romaine, chipotle chicken, roasted bell peppers, guacamole and peach salsa.  All delicious.
This was dinner last week but also lunch today as left overs.

  

We are now welcoming back healthy food with a January Whole30 starting today.  Unclear is we're going 14 or 30 days this time - mostly just until I'm feeling better and at a baseline to reintroduce things in a more strategic manner.  Holiday food wasn't really a controlled reintroduction after the last one!
